This book is to inform you about the dangers of food poisoning.How to prevent it. It also was is a warning about the food at fast food restaurants. We all are looking for a way to eat healthier.

With our busy schedules, we want to be sure the food we eat at a fast food restaurant  is safe and healthy for our faimly.

It is the desire of the author to provide as much information on how to find the safest fast food restaurants. How to prepare safe foods at home. How to shop for the safest and healthiest foods for you are family.

 

I want to dedicate this to my mother who past away in December 1975 from cancer.

Did you know that according to the Federal Government, as Americans, our food is about the safest in the world? The Federal Government  estimates that, there are 48 million cases of food poisoning yearly. That is about 1 out of 6 Americans get some kind of food poisoning  each year.

1.WHAT CAN YOU DO TO PREVENT FOOD POISONING ?

The most important  thing you can do to prevent food poisoning  is to wash your hands very often while you cook. It is very easy to spread bacteria from one food to another. Therefore  hand washing very is important. Choosing the food you want to cook is also important.  There is an old saying: “ if you start with junk, you will end up with junk.” Arming yourself with soap and hot water is the best defense  in preventing food poisoning.

2.WHAT TEMPERATURE SHOULD YOU KEEP YOU REFRIGERATOR ?

This a hard question  to answer because  many people are not sure what is a safe temperature to keep the refrigerator. Therefore,  many make the mistake  of keeping it at 50°F. When really they should always keep  the temperature  at 40°F or 5°C. At 40°F, (5°C) bacteria  cannot grow. It is best to buy a refrigerator  thermometer, in that way there is no guess work.

As a rule, two hours, most perishable food should be safe. However, after that they become “questionable”. They then need to be heated back  up to a safe temperature.  Bacteria even in very small amount can make you sick.

4.HOW LONG CAN SOUPS, LASAGNA, SPAGHETTI, AND OTHER ONE-Dish MEALS BE LEFT OUT?

 

These dishes should never be left out past dessert. If you leave them out for more then two hours you need to throw them out. It is better to feed the crows, stray dogs and cats than to become sick yourself.

5.HOW LIKELY  ARE YOU TO GET FOOD  POISONING EATING A  HAMBURGER?

Raw hamburger  can carry E.coli and other bacteria. Some bacteria  can still live in hamburger  that is still pink inside. Therefore, it is always best to have the meat well done.

6.WHAT FOODS ARE  THE LEAST LIKELY TO  HAVE HARMFUL  BACTERIA GROWING?

Surprisingly, slightly moldy cheese. This may not sound very appealing; however,  it is the least likely to be contaminated with harmful bacteria.

7.WHAT IS  THE MOST UNHEALTHY WAY  TO WASH DISHES?

If you let dishes soak in lukewarm water and wash them with a sponge that has also been soaking in that same water, you are literally growing a garden of bacteria. Unless the sponge is washed daily in a dishwasher or soaked in very hot water, the sponge itself is alive with growing bacteria. Therefore  the best way is to wash dishes in a dishwasher; however not everyone has a dishwasher. The second best way is to soak the dishes and sponge in very hot water then drain the water out and refill the sink with fresh hot water and bacteria  fighting soap.

8.YOU WANT TO GO ON A  PICNIC; HOWEVER, YOU FIND SEVERAL OPEN JARS OF; KETCHUP, MAYONNAISE, SALSA AND MUSTARD, WHICH ONES SHOULD YOU TAKE AND WHICH SHOULD  THROWN OUT?

Assuming  you are not sure on how long you have had them in the refrigerator, the best thing to do is take the ketchup, mayonnaise, and the mustard. Throw out the salsa. Here is the rule of thumb: salsa will only last one month, mayonnaise  will last two months, ketchup will last for six months and the mustard will last up to a year. With that said; the refrigerator must be at a constant 40°F (5°C)

9.CAN POTATO SALAD BE SAFE IF IT LEFT IN THE SUN AND NOT IN THE SHADE?

No, potato salad is made with mayonnaise. Mayonnaise  is the quickest to develop  harmful bacteria. Most people if they are going to get food poisoning, it will be from the potato salad. However, even such foods as chicken (even barbequed) and sliced watermelon if left out too long can potentially be unsafe.

10.WHAT ARE THE SYMPTOMS YOU SHOULD LOOK FOR?

Dangerous bacteria will generally cause sickness within the first one (1) to three (3) days after eating contaminated food. Sickness can occur  within 20 minutes. It is not uncommon  for a person to get sick six (6) weeks later. The symptoms include: vomiting, stomach pain, diarrhea, but also flu-like symptoms like: fever, headache, and body aches.

11.HOW TO PREPARE FOODS PROPERLY.

Preparing food properly early is as important as buying food properly. It is absolutely  important to wash your hands  before handling food. It is recommended  that you wash your hands in very warm water for at least 20 seconds using a bacteria fighting soap and before handling each type of food to be sure you are not cross-contaminating the food you are preparing for the meal. It is just as important  to wash all the “tools” you use between each food.

12.WHAT TEMPERATURES ARE SAFE  TO SERVE HOT AND COLD FOODS?

It is important  to serve foods at the right temperatures. Hot foods sure be served at 140°F or warmer and maintained at that temperature. Whereas, cold foods need to be served at 40°F or cooler and maintained at that temperature.

13.WHAT IS THE BEST FOODS TO BUY SO THESE FOODS WILL NOT  BE CONTAMINATED WITH BACTERIA?

It is best to shop at a grocery store  that you know and trust. When looking at produce, (clean hands) feel the produce and ask yourself; is this item firm, does it feel crisp? When looking at melons, again, feel with your hands. Knock on the melon. How does it sound? If you buy fresh bread, look at the date on it. Fresh bread will not last as long as breads that are shipped in because  of the preservatives that the commercial  bakery add.

14.WHAT OTHER THINGS SHOULD I LOOK FOR?

In the meat department, we cannot see the whole package  of  meat; therefore, remember, they will always put the best part of the meat on top. If the meat in the package you are looking at is off color then leave it. Again, check the date. If date is the day before, leave it. However, here is the tricky part if you are like me and you want the best buy for your dollar, go early. Before 9:00am is best, because that is when you will get your best buys. If they have package meat between 10:00pm and midnight it is considered “day-old”. Now that package of meat will be “older” than say the same cut that was packaged at, let’s  say, 2:30am but has sat there until 9:00pm that day. But, it will be full price.

15.WE HAVE LOOKED AT BACTERIA  IN YOUR FOOD BUT WHAT ELSE CAN MAKE YOUR FOOD UNSAFE?

You have just had your breast checked and the doctor did a b? And you have fibrosis tumors and you are told to give up coffee because  of the caffeine. Here is the problem  with decaffeinated coffee. There are two (2) ways that they make decaf coffee; 1 they run the coffee beans through spring water; however, it takes longer for the coffee beans to dry. So, the second way to decaf coffee beans is to use chemicals called formaldehyde and benzene, and methylene chloride . Yes, they do run the beans in a rinse bath and only about 96% of the caffeine can be removed. Even the water and charcoal, which is the safest water to decaffeinate coffee beans is not a 100% free of caffeine. 16.WHY ARE THEY SAYING NOT TO EAT CORN?

The best and safest place to buy corn is from a roadside vegetable stand. Commercially grown corn is also fed to cows and pigs. Therefore, it contains chemicals to make these animals grow fat faster. So naturally you are going to gain weight as well.

16.WHAT ABOUT “WHOLE WHEAT” BREAD?

Whole wheat bread is pressed to the point that most of the fiber is removed. The best way the get the fiber you need is in nuts. They not only contain fiber, but nuts also contain many health benefits .

17.HOW CAN YOU BE SURE THE CAN-GOODS YOU BUY ARE SAFE?

First, look at the outside of the can. Does the can have dents, is the top or bottom  bulging, or is there rust on the can? Second, look at the “made date” and the “sell by date” are the within six (6) months of the day you are shopping?

18.HOW CAN I BE  SURE THE DAIRY PRODUCTS I AM BUYING ARE SAFE?

There are some important  things you need to notice: first does the case or cooler feel cold to you? Are the dates current? Remember, the freshest date is going to be in the back. So you may have to do some reaching to get the freshest milk, creamer, butter, cottage cheese or sour cream. Be sure to look in the egg carton. If any eggs are cracked or broken leave it.

19.HOW DO I KNOW THE FROZEN FOODS I BUY  ARE SAFE?

When you open the door on the frozen food case you should be able to feel the cold. Frozen foods should feel loose and not in frozen chunks. If you can feel chunks that may be an indecision that the package was thawed and refrozen.

20.WHAT IS THE BEST WAY  TO TRANSPORT  MY GROCERIES  HOME AFTER I HAVE  BOUGHT THEM?

It is best to bring your own. Many stores now days even give discount if you have your own bags. Depending  on how you shop, and how much you buy. You need the kind that are made for frozen and cooler foods. It is suggested  that you have one insulated bag for meats, one or two for frozen and cooler foods. Make sure your eggs are on top. Breads should be bagged a lone. Can goods should have there own bag and fresh vegetables should be bagged alone.

21.ARE FAST FOOD RESTAURANTS A SAFE PLACE To EAT?

 When we talk about food safety, we also need to look at fast food restaurants. A good many families with children eat at fast foods restaurants. So, just how safe are they and what do you need to know about them?

22.WHAT ARE THE SAFEST FAST FOOD RESTAURANTS TO EAT AT?

In a study done by Dateline of NBC in an article: “Consumer Alert” report” they looked at 10 different  fast food chains and visited 100 restaurants of each chain and all over the country.  This is their findings.

23.THE BEST FASTFOOD  CHAINS.

Taco Bell was rated number one. They only found 91 critical violations. McDonald’s was second with 136 critical violations; however, some of those 100 restaurants  did not have a “certified trained food handler” on the job. This is a requirement in most states.

24.WHY IS HAVING A  “CERTIFIED TRAINED FOOD HANDLER ” IMPORTANT?

The “certified trained handler’s” job is to make sure the temperature of the food and the food preparation is done properly. It is also his/her job to see to it that raw meat is not mixed with cooked meat.

25.HOW DID THE OTHER EIGHT DO IN THIS REPORT?

KFC ranked 8th, Subway was 7th, Jack in a Box was ranked 6th, Dairy Queen  was 5th these four had critical violations ranging from 157 to 184. Hardee’s, Wendy’s, Arby’s, and last was Burger King. Burger King  had a total of 241 critical  violations. It is important  to understand, this is just one report. If another survey was done it might come out differently.

27.THE TRUTH ABOUT THE COMBINATION MEAL.

The fast food chains push the “combination meal” because it makes up 31% of meals sold. However, that combination  meal contains 1200 calories. Most dietary calorie count for a whole day is 1200 calories.

28.ARE YOU SURE YOU WANT THAT SODA OUT OF  THE SODA MACHINE?

Soda machines  are the absolute hardest to clean. A twelve-year-old student in Florida did a science project , (it was an award winning project). He compared the bacteria in ice water from a soda machine  and the bacteria  in the water from the toilet at the fast food restaurants. The ice water tested positive for E.coli bacteria and proved to be dirtier than the water from the toilet. In Mexico the people have a saying: “No be back El agua” the transaction  is “don’t drink the water.”

29.HOW IS FAST FOOD  MEAT CLEANED?

Chemicals like; ammonium  hydroxide will kill E.coli and other types of bacteria. Yes, the USDA.GOV says “yes” to this kind of way to clean meat.

30.DID YOU  KNOW YOU COULD BE DRINKING WOOD CHIPS AND PETROLEUM BYPRODUCTS?

Yes, and you will never guess at which fast food. Baskin-Robbins, mixed in their butterfingers is super the equivalent  of five butterfingers and cellulose gum and cellulose gel. Both of these are chemicals that are a byproduct  of wood chips. Red dry 40 is a byproduct  of petroleum.

31.HAVE YOU  EVER NOTICED THAT ALL FAST FOOD TASTE THE SAME?

There is a reason for that. The burgers, the fries, and the onion rings all taste like fast food. The fast food industry make it that way to appeal to your tastebuds. That way you’ll  keep eating. There is a part of your brain that craves centen tastes; sweet, salty, and sour. Therefore  you munch on a variety of foods. The fast food industry  has come up an idea on how to satisfy  all those cravings. That way you won’t crave anything like key lime pie.

32.HAVE YOU EVER NOTICE THAT AT A FAST FOOD RESTAURANT  YOU TEND TO  EAT FASTER BUT DO NOT FEEL FULL?

It is a proven fact, that it take your brain 20 minutes to get the “memo” of “I’m full”. It is also a proven fact, an over weight person only chews their food 11.9 times on average. While a thinner person, on average chews their food 14.8 times. That is why an over weight person  tend to eat more. The more you chew your food the sooner your brain will get the message “I’m full”. The fast food industry hopes you don’t know this because they have a chance to sell you more food.

33.WHY IS IT THAT BURGERS AND CHICKEN  BREAST DO NOT TASTE LIKE FLAME GRILLED?

This is yet another reason why fast foods are not as healthy as you would think. The grilling marks on the burgers and chicken breasts were not made by a grill nor did they ever see a flame. These marks are either branded on at the factory or painted on with a food dye.

34.JUST HOW HEALTHY ARE CHILDREN  NUGGETS?

Those chicken nuggets go so much processing they should get the purple heart. The chicken is mechanically removed from the bone and the carcess and leftover meat is than mixed together in a food processor. In this process it is a good chance the Salmonella bacteria can be harboring.

35.FAST FOOD EGGS ARE THEY REALLY  EGGS?

In an article by Forbes writer David DiSalvo, he wrote, there are a number of preservative in the fast food eggs. Perservatives like, sodium phosphate, citric acid, monosodium phosphate ( to preserve the color) and misinformation perparation. These additives have been added so you can have breakfast  all day long.

36.WHY DOES ONE FAST FOOD LOOK SO FRESH WHILE ANOTHER HAS MOLD GROWING ON IT?

There was one study done by NYU’S study program that use one fast food restaurant and KFC. Both restaurants’  food sat in a closed jar for five (5) months. The KFC food had started to grow mold, while the other fast food looked as good as it did at the start of the test. So what was the difference? The fast food chain uses a lot of sodium propionate  to prevent bacteria and mold.

37.FAST FOOD BRAN MUFFINS ARE HEALTHY, RIGHT?

One of the biggest healthy fast food promotions are their brand muffins. These “bran muffins” are really cupcakes and have about 440 calories  each and about 25% of those calories  are fat.

Well, if the people  who are actually in the commercials are not actually  eating the food then it makes you wonder. There are 283 grains of sugar and the larger size packs  have 1640 calories .

39.THE FRUIT AND MAPLE OATMEAL IS ONE OF  THE MOST UNHEALTHY FOODS ON  THE FAST FOOD’S MENU.

Your doctor says you need to cut back on your cholesterol. So you stop evey morning to get their fuirt and maple oatmeal.  Only to fine out you are starting your day out with a sugar high that is out of this world and about mid-morning  you are headed for a super crash.

40.LONG JOHN SILVER HAS HIDEN THEIR NUTRITIONAL INFORMATION.

41.THE TYPES OF FOOD POISONING AND THEIR SYMPTOMS.

Food poisoning commonly occurs in the warmer weather like summer, and children, the older people and people with low immune systems are most likely to get food poisoning. However, that is not always the case. The very healthy can get food poisoning  just as well. What are the most common  viruses and bacteria cause food poisoning ?

42.WHAT IS NOROVIRUS?

Norovirus  is virus  that is very contagious and anyone can get it. You can get it from another person. You can get it from contaminated food. You can also contract it from touching contaminated countertops, cutting boards and other contaminated items.

  1. coliis the name of a germ, or bacteria that lives in thedigestive tracts of humans and animals. There are many types of E. coli, and most just make you sick. However, some can cause bloody diarrhea,  kidney failure, and can lead to death. Still other strains of E. coli can cause urinary tract infections and other infections.

The symptoms of food poisoning  can be misdiagnosed as the flu. Therefore, it is very important  to remember all that you ate in the last 24 hours and if anyone else got sick about the same time you did.

Vomiting is a very good sign of food poisoning. Usually , a person is not able to keep fluids down. Vomiting often can make for an extremely  exhausting experience; however,  it is how the body tries to flush out all the contaminated food. Solid foods can cause more vomiting, so it is better to not have anything until you feel better.

47.DIARRHEA

Diarrhea is another common symptom people relate with food poisoning. The diarrhea and the vomiting    can drain you physically, and mentally.

48.ABDOMINAL PAIN

Abdominal pain can start shortly after eating contaminated food, and this symptom can last for a couple of days to a couple of months, depending on the severity of the food poisoning. Usinga heating pad on your belly will get some relief and help the pain go away. Drinking herbal tea, lime soda, or ginger ale can also settle the stomach. Avoid fluids that will cause dehydration like coffee and alcohol. If stomach cramps do not subside within 48 hours, call your doctor.

49.WEAKNESS AND FATIGUE

Weakness and fatigue through the body are other symptoms you will feel from food poisoning. It will take every effort you have just to move your arm or legs. Your body has lost a lot of fluids, and with a lack of food, it is common to become weak. Children and older adults with a weak immune symptom will feel much more exhausted.

Store foods at their right temperatures. Serve hot foods at 140°F and cold foods at 40°F and read the labels.
